An allergy that I never really think about that is VERY common is… eggs! I guess in my mind I always thinking of dairy & gluten intolerances, because those are at the forefront majority of the time. However, when I asked you all on Instagram Stories what content you all would love to see from me, so many people said “eggless options!” or “eggless, high protein breakfasts.” Which I was excitedly up for the challenge. Coming from a person who ADORES eggs for breakfast, coming up with a recipe that holds its savory own without the use of eggs was so much fun. I bring you the Easy Eggless Ham & Veggie Breakfast Burritos.
For me a must make easy breakfast needs to have 3 things:
- Ability to meal prep it over the weekend
- Can pull out of the freezer or fridge, reheat and it is ready to go for busy week!
- Easily adaptable (if I am feeling dairy, low carb etc.)
And you guessed it… these Easy Eggless Ham & Veggie Breakfast Burrito check ALL 3 of those boxes!
What Delicious Ingredients are in these Easy Eggless Ham & Veggie Breakfast Burritos
- Potatoes
- Red Pepper
- Ham Steak– it is just a really thick cut slice from whole roast of the ham, for example see here ( I used Turkey Ham Steak– it was wonderful!)
- Seasoning: salt, garlic powder, onion powder, pepper, paprika & cayenne pepper
- Tortilla of choice
- Cheese of choice
Told you it was that easy! Now, why choose turkey ham steak over regular ham steak? My mom doesn’t eat red meat, I wanted to make sure she had a chance to eat these as well!
Either steaks I always get Wellshire Farm’s brand, they are my go to!
How to store & reheat these delicious breakfast burritos
You will want to individually wrap Easy Eggless Ham and Veggie Breakfast Burritos in aluminum foil & store in a large bag for either the freezer or refrigerator. However, how you reheat them will be different. I also recommend individually wrapping, because it makes grab and go in the morning a breeze!
From the freezer:
I will go downstairs and preheat my oven, as well as, turn on my coffee so that when I come back downstairs after getting ready my coffee is ready and I will pop in one of the burritos!
Oven Version:
Preheat the oven to 400 degrees. Place the aluminum foil wrapped burrito directly on the middle of the top rack. Heat for 15 minutes, then flip it over and heat for another 15. Take out of aluminum foil, cut in half & enjoy! This is the best way to enjoy it in my opinion, because you still get the crispness with the tortilla.
** if it is still a bit cold on the inside ( every oven in different) zap in the microwave for a bit.
Microwave Version:
Take burrito OUT OF THE ALUMINUM FOIL. That is VERY important. DO NOT stick the burrito in the microwave until you have taken it out of the foil. Damp a paper towel, wrap the burrito in the paper towel, covering every inch of the burrito. This will ensure that the burrito does dry out. Heat for 1 minute on one side, flip and heat for 1 minute on the other side. Let cool for 15 seconds, cut open check to make sure it is cooked through and enjoy!
From the refrigerator:

Easy Eggless Ham and Vegetable Breakfast Burritos
Ingredients
- 1 1/2 tbsp olive oil
- 2 cups chopped potatoes
- 1 cup chopped red pepper (bite sized)
- 7 oz Ham Steak
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp pepper
- 1/4 tsp paprika
- 1/8 tsp cayenne pepper
- 9 oz shredded cheese of choice
- 6 tortillas of choice
For Freezing & Storing
- 6 squares of aluminum foil ( I use kitchen scissors & cut a square big enough to wrap my burrito in. About 11 X 11 square or smaller, depends what tortillas you use )
- 1 large ziplock bag to store burritos in for the freezer or fridge
Instructions
- In a medium sized skillet add olive oil and heat on medium heat. Add in chopped potatoes and season with the salt, garlic powder, onion powder, pepper, paprika and cayenne pepper. Cook for 10 minutes on medium, stiring occasionally with spatula.
- Next you will dice up your 7oz of ham steak into 1/2 inch pieces. Add the diced ham steak into the skillet with the potatoes and mix until throughly combined. After you will add in your chopped red peppers that are also in 1/2 inch pieces. Mix until throughly combined as well. Cook on medium low for 5 minutes.
Assembly Time
- Cut up my aluminum foil in squares big enough to wrap the burritos in. I do aluminum foil so that if I do want to put them in the oven to heat up, you can just take the burrito out the freezer in the aluminum and put it right into the oven.
- Lay out each tortilla on top of the aluminum foil square and take 1 to 2 tbsp of the mixture in the center of each tortilla and sprinkle 1 1/2 oz of cheese on top.
- Then roll up your burrito, right side in about 2 inches, then pull up the bottom to pull in the ingredients and fold over the side– roll tight! Then since you laid the tortilla on the aluminum you can then roll aluminum foil around it right away. Put in the freezer or refrigerator. In freezer up to 3 weeks. In refrigerator for up to 5 days.

Hi Barb! Ah yay! This is one of my favorite breakfast preps! You can use which ever you would like, it just might make a few more or few less. I use 7 or 12 inch tortillas. Hope you enjoy them!!
