This recipe has quite the story to go along with it. I was at a girls night with some of my friends and they were talking about how much they loved pickles and heard of a thing called “pickle salsa.” They had never had it before (which is funny because I sure thought they had the way they talked about it hahah) I later learned they had just seen a picture of the Grillo’s Pickles De Gallo and they wanted something like it! Therefore, I had nothing to go out but the picture of it and the idea of what my friends were looking for. Enter Easy Dill Pickle De Gallo Salsa!

Needless to say I checked all those boxes and then some. I was a little nervous bringing it to the same friends party a few days later, because let me tell you– there was so much built up on getting this right! Well when it was one of the first things allllll gone.. I am happy to report, we nailed it! I am SO excited to share this recipe with you.
What is Dill Pickle Salsa Used For?
Well the truth of the matter is, you can use this Easy Dill Pickle De Gallo Salsa for whatever you hearts desires! This briny pickle dip, is perfect for any season as well too. Here are some of my favorite ways to enjoy it:
- Top your bratwurst or hot dogs with Easy Dill Pickle De Gallo Salsa
- Add the Easy Dill Pickle De Gallo Salsa to beef/chicken burgers or black bean veggie burgers
- Don’t add it to anything…. DUNK those tortilla chips into this delicious salsa and enjoy as is!
- Make a batch of Easy BBQ Chicken Crock Pot Nachos & add it on top!
- Grill a batch of chicken and add as much of the Dill Pickle Salsa on top as you want
How is this recipe different than regular salsa?
That is a very good question, they both have the “term salsa” in it. Salsa in America is typically seen as a condiment made with tomatoes, chilies and onions. However, salsa traces back as far as before 1500s by the Aztecs, Incas & Mayans. It is said the natives used tomatoes, chiles and squash seeds. This salsa also is a Pico de Gallo type of salsa, which is an uncooked type of salsa with chopped onions, peppers etc. with more a chunky consistency, where all ingredients are visible.
So instead of the typical Pico de gallo salsa having chopped tomatoes we have chopped dill pickles instead. Instead of lime juice, we use pickle juice. Then we use a combination of the following ingredients to really create the best marinade of flavors!
Easy Dill Pickle De Gallo Salsa Ingredients:
2 cups chopped dill pickles (in small bite sized pieces)
2/3 cup pickle juice (juice from the jar of pickles)
2 jalapeños (de seeded & diced very small)
1 red bell pepper chopped (in small bite sized pieces)
1/4-1/3 cup of a yellow onion depending on your onion preference (diced finely)
2-3 cloves garlic ( the more the merrier in my opinion!)
pinch of salt

Easy Dill Pickle De Gallo Salsa Directions
- In a medium mixing bowl add your 2 cups chopped pickles, chopped red pepper, finely chopped & de seeded jalapeños, finely chopped onion & minced garlic.
- Take a spatula and mix until throughly combined. Add a pinch of salt & mix throughly again.
- Pour the pickle juice on top. Cover the mixing bowl & marinade for 24 hours. Then Devour!
