Yes! I sure did, and it is possible and IT IS scrumptious. Cooking eggs in the waffle iron is about to blow your mind if you haven’t ever done it, plus it makes for wonderful leftovers! Cooking them in the method I am about to show you will cook the eggs perfectly, they will not be dried out and they will be perfect reheated for leftovers the next day. While I was recipe testing, Ainsley assisted me and we tried over and over until we perfected it. Also I was doubtful about the reheating, but this recipe makes them perfect for that as well! What Delicious Ingredients Do I Need For These Easy Denver Omelette Waffles
This is what is so perfect about this recipe is you can make 1 serving super easy or you can make a big batch for Easter, or any breakfast/brunch gathering you have! Also the ingredients are super easy to change and make geared toward any of your guests. However, the best part of the whole Easy Denver Omelette Waffle is the Applewood Smoked Ham by Wellshire.
Wellshire is a brand that I have used for YEARS before we started working with them. Honestly, I am still over the moon about working with them, because we ate their product before I even started HGHF. I only work with brands that my family uses and loves so much. I am so excited to share my love for Wellshire with you all! Their products are free from preservatives, antibiotics and nitrates. The animals are raised humanely & fed a vegetarian diet. This ham is already cooked– all you need to do EAT it :)!
Ingredients:
Wellshire Applewood Smoked Ham
Thick cut cheddar cheese
Green Pepper
Salt & pepper to taste!
That is it! Simple, delicious and exactly what we need!
Directions
So I found a mini Easter themed Waffle Iron from Target which I think takes these up a notch! Feel free to make in your larger Waffle Iron, but if you can find one that is a mini shaped iron– do it. I feel like I could get Ainsley to eat ANYTHING if it is made from this iron hahaha.
These directions are for the single served Waffle Iron, but just adjust the serving below in the recipe and you can make 4 at a time with the regular waffle iron.
- In a mixing bowl add 1 egg, 1 tbsp of diced Wellshire Applewood Smoked Ham, 1 tbsp of thick cut cheddar cheese, 1 tbsp of chopped green pepper and then season with salt pepper. Which until fully scrambled.
- Heat the waffle iron per instructions, and spray with approved oil ( we use avocado oil )
- Pour batter into the waffle iron, 1 tbsp at a time until it is filled to capacity that it can hold without over flowing.
- Set the timer for 3 minutes, take it out exactly at 3 minutes.
- Then top with more cheese, salsa or whatever your heart desires!
*** Ainsley and I tried multiply different times, 4 and 5 minutes made the egg too dry, 3 minutes makes the eggs nice and fluffy while getting the cheese nice and melted, with the ham cooked to perfection!
What if my eggs turned out to dry?
It is because it was cooked for too long, 3 minutes is the perfect temperature on ours. However, if it is turning out too dry, try 1 minute less increments until it is perfect for you
Can I use other meat in the recipe?
Of course! I am also obsessed with Maple Bourbon Bacon of Wellshire’s as well. However, you will want to cook them before hand, the Easy Denver Omelette Waffles are not in the iron long enough to cook the bacon properly.

Actually they REALLY are!! I love to make a big batch of them and then having them for easy meal prep breakfast for the week. Just sprinkle a bit more cheese on top, zap in the microwave for 30 seconds and then drizzle salsa on top! YUM!
