My favorite thing is seeing everyone sitting around the table, smiling from ear to ear, sharing about their day and of course, enjoying the food 🙂 I think there is something magical about dinner time. A time where we are finally all together and can spend the little bit of time we have together during our busy weeks! Now this Easy Crock Pot Tuscan Chicken is not only easy but down right delicious. What Simple Ingredients Do I Need For The Easy Crock Pot Tuscan Chicken
- 3 to 4 boneless skinless chicken breasts (1 1/2 -2 lbs)
- 2 cups fresh spinach
- 1 15oz jar of your favorite Alfredo sauce
- Grated parmesan cheese 1/2 cup
- Chicken broth 1/2 cup
- Sun-dried Tomatoes 1/2 cup (vacuum sealed in package not in the jar)
- Dried Basil 1/2 tsp
- Salt 1/2 tsp
- 1/4 tsp pepper
For searing the chicken before Crock Pot
- 1/4 yellow onion chopped
- 3 cloves garlic minced
- 2 tbsp olive oil
- basil, salt & pepper to sprinkle over each side of the chicken breasts
How Easy Is the EASY Crock Pot Tuscan Chicken
Well it sure is EASY, but one of the best things you can do for a Crock Pot recipe is to doctor is up before you place it in the Crock Pot. There are so many great Crock Pot dump recipes, however if you just take a few minutes extra I promise you it will take your taste buds to the next level! So trust me here… you want to sear your chicken before putting it in the crock pot. Let’s do this!
- In a large mixing bowl add in your favorite Alfredo Sauce, grate parmesan cheese, chicken broth, chopped sun-dried tomatoes, 1/2 tsp dried basil, 1/2 tsp salt and 1/4 tsp. Whisk together until throughly combined, then set aside.
- Add 1/4 chopped yellow onion, 3 cloves garlic minced and 2 tbsp olive oil to a large frying pan. Heat at medium heat for 2 minutes– occasionally mixing.
- While the garlic and onion is sautéing, season each side of your boneless skinless chicken breast with salt, pepper and dried basil.
- Add the chicken breasts to the frying pan and sear the chicken breasts on each side for 3 minutes each. During the searing cover frying pan with fit lid or aluminum foil to seal in the heat.
- While the chicken breasts are searing, grease the inside of your 4 qt crock pot. Then pour about 1/3 of the Alfredo mixture at the bottom of the Crock Pot.
- Once each side of the chicken breasts have been seared add them on top of the 1/3 of the Alfredo mixture in the Crock Pot. All of the onion & garlic from the frying pan as well.
- Then pour the rest of the Alfredo mixture on top of the chicken breasts and then turn on low for 3 1/2 hours.
- At 3 1/2 hours, add in 2 cups of fresh spinach roughly chopped spinach. Fold in until incorporated.
- Then take each chicken breast out and serve with fresh veggies! ( the chicken falls apart so easily because it is so perfectly tender. Therefore, take out cautiously)

I have not used a Crock Pot larger than 4 qt, just make sure that the sauce covers the chicken breasts
Would I be able to use chicken thighs instead of chicken breasts in the Easy Crock Pot Tuscan Chicken?
I have not used chicken thighs in this recipe, however I will make sure I try it with them as well! If you do, you will want to cook chicken thighs a bit longer about 30 mins to 60 mins, so keep eye!

The oil in the jar tends to make the sun dried tomatoes super potent. Therefore, we want the sun dried tomatoes to taste great in this recipe but not over powering. Therefore we want to use the vacuum sealed ones, not jar ones.

There are so many great ways to serve this recipe! In this case we love to serve the Easy Crock Pot Tuscan Chicken as a low carb option, however there are so many times where we want other options! See below some of my favorites.
Over Pasta:
One of our favorite ways to serve this Easy Crock Pot Tuscan Chicken is over pasta! The sauce that the chicken in cooking in makes the perfect sauce for the noodles. Also the chicken falls apart so easily that it makes for perfect bite sized pieces in the pasta
With Mash Potatoes:
Just like the above, man is this sauce good, so when you can pour it over mash potatoes with the chicken you are in serious heaven my friend
Low Carb Option: Zoodles
I understand that pasta doesn’t always work out for others, even gluten free pasta. That is why I recommend serving this on top of Zoodles.
Low Carb Option: Serve with veggies

This was such a yummy recipe! Hubs and I ate with a small piece of crusty bread and served it over bowtie pasta for the kids. Everyone ate it up! Will definitely make again.
