Alright guys, I appreciate you all more than you know 🙂 When I asked you guys what would be relevant content right now, you guys had so many amazing ideas & suggestions. One of them being that pantry staple type of recipes would still be helpful! As well as easy dinners to put together while kids are running wild… hahah totally get that! Right now it is so difficult to figure out where everyone is at during this horrendously confusing & difficult time. So as always feel free to message me, email me etc. I always want to know the best things I can bring to HGHF to help you in anyway!
So I have this amazing recipe I wanted to make sure I pushed forward before Memorial Weekend! Why?
- So perfect to share with family & who ever you are social distancing with at this moment
- It takes under 10 minutes to put together & then you have so much more time to have fun with family, get things done around the house… heck PUT YOUR FEET UP…. & have someone make you a drink 🙂
- It is oh so delicious & everyone around you will be so pleased & pouring you another drink, because they love it so much 😉
What ingredients are in this easy dish?
- Chicken Breast
- Shredded Cheese
- Jar of favorite salsa ( I recommend using one that is corn salsa & has chunky tomatoes, that way you have some great corn pieces in there!)
- Taco Seasoning ( I highly recommend Simply Organic– you can trust the ingredients in these spices)
- Can of green chilies
- Can of refried beans ( Always look for one with ingredients that are just beans)
Easy Chicken Salsa Bake
Ingredients
- 1 16oz can refried pinto beans no oil added
- 2 chicken breasts large
- 1 packet mild taco seasoning (prefer Simply Organic)
- 1 cup cheese shredded (love mix of Monterey Jack & Gouda)
- 1/2 cup cheese shredded (love mix of Monterey Jack & Gouda
- 1 jar black bean corn salsa (love the Roasted Corn, Black Bean, Cotjia Cheese salsa from Whole Foods
Then any of the toppings you'd want! Like avocados, sour cream, tomatoes, black olives etc.
Instructions
- Grease an 8 X 8 baking dish
- Take the 2 large chicken breasts & cut into 1/4 inch pieces thick & about 2 inch in length. I lay the breast down & cut vertically along the short slide not long ways. Then place pieces into the bowl. Sprinkle 1/2 of the mild taco seasoning
- Then pour the refried beans can into the dish & smooth flat with a spatula
- Then sprinkle 1/2 cup of cheese over the refried beans. Then pour the hatch chiles ( not drained) over the cheese, smooth over with spatula again.
- Next pour 1/2 cup salsa & smooth over. Pour the chicken on top & spread evenly over the top. Pour 1/2 cup more of the salsa on top, then sprinkle 1/2 cup more of cheese on top.
- Place in oven at 375 degrees for 18 minutes. Take out & sprinkle the rest of the 1/2 cup of cheese on top. Then place back in oven for 10 more minutes, then turn on broil HIGH for 5 minutes ( check throughout those 5 minutes, pull out when starts to get a little brown on the top, perfect crispness!)
- Then take out of oven, scoop into a bowl, top with all your yummy toppings, tortilla chips as well & dive in!!
