This Roasted Potato Cabbage & Chicken Sausage sheet pan.. I am not kidding when I say this… this is my jam! I am all about simple sheet pan meals, that you can then divide up onto all the plates for dinner for easy serving! Also divide into all the lunch prep containers for easy to go meal prep! This combo is one of my absolute favorites. If you have never had roasted cabbage you are MISSING OUT. It is a completely different food when roasted. Don’t get me wrong, I low raw cabbage, but I’m telling ya, what I do with it here… oh baby! 🙂 Also cooking potatoes this way as well & the chicken sausage.. and and and hahah you can tell I can rave about it for awhile…. so instead of wasting your time, head on down & try it yourself!!
What are all the yummy layers on this Easy Cabbage Chicken Sausage Sheet Pan?
Delicious seasoned roasted potatoes
Chopped & seasoned green cabbage
Add the chicken sausage slices and continue baking & then serve!
Healthy Cabbage Chicken Sausage Sheet Pan
Ingredients
- 10 Yukon gold potatoes
- 1 head of green cabbage
- 4 Italian Chicken Sausages
- 2 tbsp olive oil
- 1 tsp salt + 1/4 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp oregano
- fresh ground pepper
- 1/3 cup white wine vinegar
- 1 tbsp honey
Instructions
- Preheat oven to 425
- In a large bowl add in cleaned & diced potatoes. Then drizzle the olive oil on top of the potatoes. Season with the 1 tsp salt, garlic powder, onion powder, paprika, oregano & pepper. Toss until they are evenly coated. Then spread out on a baking sheet as see below. Then roast potatoes at 425 for 10 minutes. Then take spatula & toss them around on baking sheet. Still with them spread out like below, then roast for another 15 minutes.
- While the potatoes are roasting, dice up the chicken sausages into 1/4 inch ringlets as seen below & dice up your cabbage into chunks like below as well. Add the cabbage to a large bowl, then pour white wine vinegar & honey into a small bowl– whisk until incorporated. Then pour the honey & vinegar mixture over the cabbage, next sprinkle with the 1/4 tsp salt. Toss with your hands until all the cabbage is coated.
- After the potatoes have roasted for 20 minutes. Take out of the oven again & toss once more. Then take the bowl of cabbage– do not pour the cabbage on top, but take your hand & sprinkle the cabbage on top of the baking sheet & potatoes. With the spatula toss the cabbage with the potatoes so they are evenly disbursed. Then place baking sheet back in oven & roast the cabbage & potatoes together for 10 minutes.
- After those 10 minutes are up, sprinkle the chicken sausages on top of the baking sheet with potatoes & cabbage. With the spatula toss them in as well. Then roast for another 7 minutes. If there are pieces of cabbage that are getting too charred, take those pieces off and/or turn your oven down to 400– every oven can be slightly different.
- Then serve with salad, vegetable rice or anythign else of your choosing! Perfect for lunches for the week as well.
