How to Prep the Easy Berry French Toast Bake Ahead of Time
The best way to make this recipe ahead of time is to do all the leg work the night before. I am telling you this makes it so easy to add to the baking dish and let it bake. That way you can put it in, in the morning right when you wake up so then by the time you are done getting ready for work it is done as well! Also it is great if you have a special occasion to already have it prepped to then just put together the next day. However, how do we do that? Let’s find out!
- Dice up the brioche bread the night before then keep it in a large ziplock bag on the counter.
- Prep all the ‘wet ingredients & seasoning’ in an air tighter container over night( eggs, salt, cinnamon, nutmeg, milk of choice, half & half, vanilla extract and almond extract
- Dice the berries & portion out the blueberries
Those are 3 easy steps to ensure that you can have an easy morning. How Do I Make This Easy Berry French Toast Bake
Follow these instructions to make the best Berry French Toast Bake Ever! You will enjoy this for easy breakfast prep for the week or special occasion… or really anytime you name it!
Instructions
- Grease a 9 X 13 pan ( I like to do it with coconut oil) then put half of the bread cubes at the bottom of the pan. It should fill the whole bottom & create a nice layer with no empty spaces. Then sprinkle 1/2 cup of the blueberries over the bread cubes. Then slice up half of the strawberries & sprinkle those over it as well. After, break apart 4oz of the cream cheese & sprinkle pieces of it evenly over that layer.
- Then you do the exact same thing over again to create your second layer. Using the rest of the bread cubes, blueberries, strawberries & cream cheese.
- Then in a large bowl add in eggs, milk, half & half, salt, cinnamon, nutmeg, 1 tbsp coconut sugar, almond extract & vanilla extract. Whisk until throughly combined, it may take a minute to get the cinnamon to fully mix with the rest of the liquid, but keep whisking until it is incorporated & not just on the top.
- After pour the liquid all over the top of the casserole. Then push down the top layer so the bread & tops are submerged in the liquid. In a small bowl add the 1/2 tsp cinnamon & 1/2 tsp coconut sugar– whisk together. After sprinkle the cinnamon & sugar mixture on top of the casserole, & place in oven at 350 degrees for 50-55 minutes. You may want to cover it around 45 minutes with aluminum foil, however, I feel like leaving it uncovered allows the top to get nice & golden brown with the sugar/cinnamon.
- You will know it is done when you take it out & it pasts tooth pick test, as well as not jiggling anymore. Then let sit for 5 minute & the slice! Drizzle with more fresh fruit, maple syrup– you name it! Enjoy!

Is this Easy Berry French Toast Bake dairy free?
This Easy Berry French Toast Bake is not dairy free, however if you use DF milk, creamer and cream cheese, it could be! Let me know if you try.
Can I use other bread besides Brioche?
I have not used other bread besides Brioche. I highly recommend not using other bread beside Brioche. Brioche has the best consisency especially when it absorbs the liquid.
Am I able to use other fruit besides strawberries & blueberries in this Easy Berry French Toast Bake?
I have yet to use other berries or fruit, but I am sure you could! Let me know if you try a combination!
