This is seriously one of the easiest one serving breakfasts ever. I mean cake for breakfast? Say what? Yes. I’m saying it. It is also one serving in a nice big mug, so no need to share. Unless you are me and have a three year old who eats all of yours before you get a chance to….! However, hey that speaks to how yummy this is. Easy Banana Chocolate Mug Cake is going to be your new go to easy recipe.
Now this recipe is easy & has simple ingredients. The ingredients are perfect for fueling your morning. I have tried other mug cakes before creating this recipe. To be honest I had a hard time with the consistency. A lot I tried used coconut flour or almond flour & I couldn’t quite get over the gritty tasting. SO I decided to grind up my own oat flour & go to town trying them out!
Oat flour is a lot cheaper than other gluten free flours. Just get a nice big container of gluten free old fashioned rolled oats & blend them in the blender until it is a smooth flour consistency ( about 45 seconds to 1 minute). Then I store in a mason jar & use for pancakes, these mug cakes or as substitute for flour! I am so excited for you. We ate 3 yesterday… no shame in this mug cake game!
The Simple Ingredients for the Easy Banana Chocolate Mug Cake
- 3 tbsp + 1 tsp oat flour
- 1 banana ( the riper the better)
- 1 egg
- 1 tbsp Milk of Choice
- 1/4 tsp vanilla extract
- dash of ground cinnamon
- pinch of salt
- 2 tbsp Enjoy Life mini semi sweet chocolate chips
As you can see in the recipe, the only added sweeter is the chocolate chips you add! The banana is the natural sweetener in the recipe. Therefore, I recommend the riper bananas for this recipe. Now you won’t sit and think you riper bananas will need to go in the trash— no sir! Time to use those ripe bananas for something more than banana bread ( even though I do love banana bread!)
How Easy is this EASY Banana Chocolate Mug Cake

1. Lightly grease a deep mug with coconut oil or whatever you choose
2. In that mug take banana & mash it until full mashed well, then add in one egg & whisk until fully incorporated. Next add in the vanilla extract & milk of choice. Mix with a fork until full incorporated as well.
3. Next add in the dry ingredients: cinnamon, salt, chocolate chips & oat flour. Mix until it is all combined.
4. Then heat in microwave for 90 seconds to 2 minutes. Check with tooth pick if it needs any longer depending on what mug you use. But start with 90 seconds, mine never take longer than that. However, do what is best for your microwave! Then sprinkle MORE chocolate chips on top & sliced banana & seriously GO TO TOWN!

Can I use other flours in this recipe?
I do not recommend using other flours to make this recipe. Mug cakes are very precise when it comes to the recipes. They are not easy to substitute ingredients for and get that same consistency you want.
Am I able to substitute the banana in this recipe?
Bananas play a huge factor in the texture as well as the natural sweetener to the recipe. Therefore, I do not think substituting the banana would work.
My Mug Cake came out “spongy texture” — what happened?
This means that you microwaved it for too long. The top part of the mug cake should spring back a bit when you touch it, and the top should still be a little wet.
