I would eat The Easy and Healthy Instant Pot Buffalo Chicken quesadilla every day…. it…is..that..GOOD. Now one of the things I love about it is the shredded chicken that is in it. This shredded chicken is a simple Instant Pot recipe to make this chicken easy and healthy for this quesadilla and then you can utilize the buffalo chicken for so many things! Not to mention it is made with clean ingredients, that makes eating healthy a no brainer!

Well Alaina Quesadillas aren’t healthy…..
Yes, quesadillas aren’t one of the healthiest recipes. However, what it comes down to is WHAT you are making it with. In this case, what makes the difference is the ingredients that go into the chicken, the ranch & the type of tortillas you use. I have so many things I could get on the soap box to talk about & this is one of my big ones–INGREDIENTS. That is one of the biggest pitfalls I think we fall into when it comes to trying to eat healthy. I am ALL about balance & throwing in these meals, where yes they aren’t SO healthy for you, but they aren’t bad for you either. They are made with quality ingredients and also have a lot of great benefits at the same time. For instance, it is our society programming our minds, weight loss programs etc, that focus on:
LOW FAT or ZERO CALORIES
Now we might be seeing the numbers drop on the scales, but at what price? We need to ask ourselves & look into what is making it LOW FAT or have ZERO CALORIES. In addition, chances are if something is low fat–not naturally low fat they were altered. Altered by what?
+ Take low fat cheeses for example– depending on the brand, especially shredded cheeses, they can be packed with 12 + ingredients & 20% more sodium. If cheese has more than 3 ingredients I am having a hard time thinking that is cheese…
+ Salad dressings are number one when it comes to something that I HIGHLY recommend making your own or looking at getting full fat vs. low fat. The amount of sugars, preservatives & corn syrups to make it low fat is crazy. Plus the lack of HEALTHY fats and olive oil.
Bottom Line: There are things added into your food in order to make it low fat or have zero calories unnaturally. Which then results in sugars to bring back the taste, artificial flavors, syrups & preservatives. So it may appear on the outside you are loosing weight initially, but at what cost to your insides?

Just FOUR ingredients for the Easy and Healthy Instant Pot Buffalo Chicken
+New Primal Mild Buffalo Sauce
+Garlic
+Garlic Ghee (or butter)
+Honey
The Best Buffalo Chicken Quesadilla
Equipment
- Instant Pot
Ingredients
Buffalo Chicken
- 4 chicken breasts bonless skinless
- 1/2 cup New Primal Mild Buffalo Sauce
- 2 tbsp New Primal Mild Buffalo Sauce
- 1/4 cup honey
- 3 tbsp garlic ghee melted
Healthy-ish Ranch
- 1/2 tbsp dill dried
- 1/2 tbsp parley dried
- 1 tsp garlic salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp chives fresh if possible
- 1 cup greek yogurt
- 3/4 cup buttermilk
- 1/2 cup mayo
When Assembling Buffalo Chicken Quesadilla
- Tortillas
- Healthy-ish Ranch from above
- Buffalo Chicken from above
- Shredded Romaine Lettuce
- Green Onions
- Shredded Cheese of Choice
Instructions
Buffalo Chicken
- In medium bowl whisk together hot sauce, honey, melted butter & garlic
- Place chicken breasts into the Insta Pot & pour the sauce from above over the chicken breasts
- Pressure cook at 10 minutes & then quick release
- With two forks, shred the chicken & stir the chicken in the remaining sauce. Then turn on sauté and add two more tbsp of hot sauce & continue stirring until the chicken absorbs almost all of it.
Healthy-ish Ranch
- In a medium size bowl whisk together yogurt, mayo & buttermilk. Add in seasonings & chives, then whisk together until full combined. Refrigerate for at least 2 hours before serving
Assembling Buffalo Chicken Quesadilla
- In a nonstick skillet add tortilla & half of the shredded cheese & then sprinkle shredded chicken on top
- Drizzle with ranch dressing, green onions and remaining shredded cheese. Then top with the second tortilla.
- Cook on both sides until crispy. Cut then drizzle with ranch buffalo sauce & sprinkle with lettuce and more green onions. Then Enjoy!
