Is there anyone who DISLIKES 30 minute meals?! I do not think so! How could you? 30 minute dinners are life savers in my book. Like I mentioned in my Easiest 30 Minute Lemon Chicken Linguine post I am a single mom, who is a teacher, chasing around my 3 years old and running this food blog buisness…… if I do not scream HELP ME WITH DINNER, I don’t know what does 🙂 So how does the Easiest 30 Minute Shrimp Burrito Bowl sound? DELICIOUS!
I will say this again, especially if you did not read my last post with the one of the other show stopper Taylor Farm Recipes: I do not partner with brands just to partner with them. For me, I am not going to share a brand on here that I don’t 100% back and that our beliefs don’t align. You have my word. We are all about Real Food and Real Ingredients here. Therefore, we need healthy, delicious and EASY meals. Thank you Taylor Farms… bow down to you! I am constantly buying their products from their easy shredded cabbage, broccoli, salad kits ( UMM EVERYTHING BAGEL!) and now these NEW Meal Kits that can be thrown together in under 7 minutes! WHAT? They are packed with clean ingredient sauces, veggies and pasta/rice. I mean what more can you want? So what did I do…. I came up with 2 delicious meals UNDER 30, that add protein to two of their new healthy and delicious meal kits. Their Lemon Pesto Meal Kit and their Southwest Meal Kit. Let’s get started with the Easiest 30 minute Shrimp Burrito Bowl.
How to Cook the Shrimp Perfectly
What is so wonderful about these meal kits? Well any protein works so well! However, when it came to this tangy & Chile verde sauce the one protein that came to mind was SHRIMP. I think chicken breast, steak or even ground beef // ground chicken would work well here.. but shrimp was my go to!
What do I need?
- 1 pound deveined shrimp
- 1 large lime
- Cumin
- Salt
- Paprika
- …… that’s it!
Then in a 8 X 11 baking dish, shrimp. Pour the juice of 1 lime over the shrimp. Flip them over to coat each side. Then sprinkle with the cumin, salt and paprika on both sides. Then you are good to go! I am telling you, easiest shrimp for this 30 Minute Shrimp Burrito Bowl!
How do cook the shrimp to perfection?
The key to cooking shrimp is DO NOT over cook it! Honestly, shrimp takes less than 5 minutes to cook and just when you think it MIGHT be done, 9 times out of 10 it already is. So the key is to watch out for the color. It is done once it has gone from grey to a pink/white and is opaque ( no longer see through). In a frying pan you will add 1 tbsp olive oil and on medium heat, heat the pan for about 1 minute. Add the shrimp to the frying pan.
Then cook 2 minutes per side, then transfer to plate. You will cook the rest of the meal kit in the same pan to get the same flavors of the cooked shrimp.
BAM! Oh so simple!
Is this meal just an option for dinner?
It is the perfect dinner! However, one of the many things I love about this Easy 30 Minute Shrimp Burrito Bowl is that it is delicious for lunch as well! Talk about a perfect lunch meal prep for the week too. Also the shrimp leftover is wonderful in wraps or on salad as well through the week.
Can I make this dinner the night before?
This meal kit reheats really well and so does the shrimp, so it makes the perfect candidate for prepping the night before. Also you could go ahead and cook the shrimp over the weekend and use in the meal kit during the week. That way your meal would really only end up being 7 minutes!
How should I store this meal kit?
Once you make the shrimp store it in an air tight container for 3-4 days. 4 days at the max, especially with fish. The veggies hold really well and don’t get too soggy, so they last really well after being cooked in an air tight container for 2-3 days.
Can I use other protein in this meal kit?
You sure could use chicken, steak, tofu, or ground beef/chicken. However, I feel like the flavors for this work so well with shrimp, so that is my favorite protein to use. Easiest 30 Minute Shrimp Burrito Bowl
Ingredients
- 1 Taylor Farms Southwest Meal Kit
- 1 lb deveined shrimp
- 1 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp paprika
- 1 large lemon
Optional
- 4 oz cotija cheese to sprinkle on top when done
- 1 lime to cut into wedges to serve with
- black beans
- corn
- cilantro
- cherry tomatoes
Instructions
- In an 8 X 11 baking dish shrimp and toss in the juice of 1 lime and pour over the top of the shrimp. Flip over the shrimps to coat with the lime juice
- In a small bowl whisk together the salt, cumin and paprkia. Then sprinkle both sides of the shrimps with the seasoning, rubbing it in with your hands.
- In frying pan heat 1 tbsp of olive oil on medium heat for 1 minute. Add the shrimpe cook for about 2 minutes on each side until they turn white/pink and are opague ( no longer see through)
- Then set the shrimp on a plate while you cook the Taylor Farms Southwest meal kit per the instructions on the bag in same frying pan.
- Then lastly, I add the cotija cheese in to have it melt over the rice and veggies.
- Plate the delicious Southwest Rice mixture onto a plate with the delicious shrimp on top. Sprinkle with more cotija cheese, black beans, corn, tomtatoes and fresh cilantro and serve with a lime wedge. Enjoy!
