Is there anyone who DISLIKES 30 minute meals?! I do not think so! How could you? 30 minute dinners are life savers in my book. I mean I am a single mom, who is a teacher, chasing around my 3 years old and running this food blog buisness…… if I do not scream HELP ME WITH DINNER, I don’t know what does 🙂 So how does the Easiest 30 Minute Lemon Chicken Linguine Sound? DELICIOUS!
That is where Taylor Farms comes in. You all know that I do not partner with brands just to partner with them. Therefore, we need healthy, delicious and EASY meals. Thank you Taylor Farms… bow down to you! Their salad kits are always a must in my shopping cart ( DILL PICKLE salad kit anyone?!) and now these NEW Meal Kits that can be thrown together in under 7 minutes! WHAT? They are packed with clean ingredient sauces, veggies and pasta/rice. I mean what more can you want? So what did I do…. I came up with 2 delicious meals UNDER 30, that add protein to two of their new healthy and delicious meal kits. Their Lemon Pesto Meal Kit and their Southwest Meal Kit. Let’s get started with the Easiest 30 minute Lemon Chicken Linguine.
How to Cook the Chicken Perfectly
What is so wonderful about these meal kits? Well any protein works so well! However, when I think of the scrumptious flavors of the sauce in this meal kit (lemon & pesto) to me that screams chicken. Therefore, for this Easy 30 Minute Lemon Chicken Linguine, I decided on a super easy marinade that doesn’t require a lot of time or effort. Perfect for week night right?
What do I need?
- 2 Large Chicken Breast
- Garlic Ghee
- Dried Basil
- Salt
- Garlic powder
- …… that’s it!
Then in a 8 X 11 baking dish, place chicken breasts. Take a knife and cut 1 inch in diameter slits and about 1/8 inch deep on the tops of the breast. This is to allow the lemon juice to get down into the chicken without slicing it too deep.
Pour the juice of 1 lemon over the chicken breasts. Flip them over to coat each side. Then sprinkle with the dried basil, salt and garlic powder on both sides. Then you are good to go! I am telling you, easiest chicken for this 30 Minute Lemon Chicken Linguine!
How do I pan fry the chicken to perfection?
In a frying pan you will add the garlic ghee and on medium heat, heat the pan for about 1 minute. Add the chicken breast to the frying pan. Cover with aluminum foil. Cook for 8 minutes on each side. A bit longer depending on how big the breast. Keep an eye on the middle.
Then let it rest for a 2 minutes before slicing. That is when you would make the rest of of your Taylor Farms Lemon Pesto Meal Kit. In the same pan, to get the leftover flavor from the cooked chicken!
BAM! Oh so simple!
Is this meal just an option for dinner?
It is the perfect dinner! However, one of the many things I love about this Easy 30 Minute Lemon Chicken Linguine is that it is delicious for lunch as well! Talk about a perfect lunch meal prep for the week too. Also the chicken leftover is wonderful in wraps or on salad as well through the week.
Can I make this dinner the night before?
This meal kit reheats really well and so does the chicken, so it makes the perfect candidate for prepping the night before. Also you could go ahead and cook the chicken over the weekend and use in the meal kit during the week. That way your meal would really only end up being 7 minutes!
How should I store this meal kit?
Once you make the chicken store it in an air tight container for 3-4 days. 4 days at the max, especially with chicken. The veggies hold really well and don’t get too soggy, so they last really well after being cooked in an air tight container for 2-3 days.
Can I use other protein in this meal kit?
You sure could use shrimp, steak, or tofu. However, I feel like the flavors for this work so well with chicken, so that is my favorite protein to use. Easy 30 Minute Lemon Chicken Linguine
Ingredients
- 1 Taylor Farms Lemon Pesto Meal Kit
- 2 Large chicken breast
- 1 large lemon
- 1 tbsp garlic ghee
- 1 1/2 tsp dried basil
- 1 tsp salt
- 1/2 tsp paprika
Optional
- 4 oz feta cheese crumble on top
- 1 lemon cut into wedges to serve in the end
Instructions
- In an 8 X 11 baking dish add the chicken breasts. Score the top of the each chicken breasts 4 times about 1 inch in diameter and 1/8 of an inch deep. Juice the large lemon and pour lemon juice over the chicken breasts.
- Toss the chicken breasts in the lemon juice. In a small bowl whisk together seasonings. Then sprinkle the seasonings over both sides of the chicken breasts and rub in with your hands.
- In large frying pan add 1 tbsp garlic ghee and let heat on medium for 1 minute. Add chicken breasts and cover with aluminmum foil. Cook on each side for 8 minutes or until there is no pink on the inside ( may take 9 minutes for larger chicken breasts)
- Set the chicken breasts aside on cutting board when done cooking and let rest until the meal kit is ready. This will ensure the chicken stays juicy.
- Cook the Lemon Pesto Meal kit per directions on bag. At the last step, sprinkle cheese over the linguine and let melt into the mixture.
- Plate the lemon pesto linguine and sliced lemon basil chicken on top of the linguine. Sprinkle with feta and serve with lemon wedge. Enjoy!
