Toaster Strudels were always a hit right? I mean the frosting swirl on the top & all the flavors. However, I wasn’t the Strudel fan, instead I was the Toaster SCRAMBLE fan! I truly think they were by far the best. The bacon Toaster Scramble or the sausage Toaster Scramble, whichever they were I was obsessed! That is why it dawned on me, why not recreate our own Toaster Scrambles using Kodiak Cakes! You all know my obsession with Kodiak Cakes runs deep and the Kodiak Cake Buttermilk Mix is the best to use for flour when baking. Therefore were going to take the Kodiak Cake Buttermilk Mix & transform it into the crust for these Delicious Bacon & Egg Toaster Scrambles! Let’s Get Started!
What Ingredients Do We Need for the Delicious Bacon & Egg Toaster Scrambles?
Do not let the list of ingredients for the crust or filling intimidate you. They not hard to throw together and believe me once you have them, you will be making them over & over!
Ingredients:
Bacon Toaster Scramble Dough:
2 cups Buttermilk Kodiak Cake Waffle & Pancake Mix
1 cup Greek Yogurt
garlic powder ¼ tsp
onion powder ¼ tsp
dried basil ¼ tsp
Bacon Toaster Scramble Filling:
4 strips of bacon
3 tbsp all purpose flour
1 cup milk
4 oz cream cheese
½ cup shredded cheese
Salt & pepper to taste
2 egg yolks
Let’s Make the Delicious Bacon & Egg Toaster Scrambles
Directions:
Preheat oven to 375 degrees
Makes 6 large Bacon Toaster Scrambles or 8 mini ones
Bacon Toaster Scramble Dough:
- In a large mixing bowl add in Kodiak Cake Mix, garlic powder, onion powder and dried basil. Whisk until fully incorporated
- Add in greek yogurt and then with a spatula mix until it starts to clump into dough pieces. Then take your hands and start kneading the dough in the bowl into one large dough ball. Let sit while you work on the toaster scramble filling.
Bacon Toaster Scramble Filling:
- In a frying pan cook 4 pieces of bacon until golden brown and crispy per instructions on the package. Place bacon on a plate & reserve 2 tbsp of the bacon grease in the pan, pour the rest out.
- Place the pan back on medium heat and add 3 tbsp of all purpose flour to the bacon grease that was reserved in the pan. Cook for 2 minutes, occasionally stirring. Wanting the flour to get golden brown.
- Next add in the 1 cup of milk, 4 oz cream cheese and ½ cup of shredded cheese. Continue to whisk until it becomes thicker, about 2 minutes. Then break apart your cooked bacon into the mixture and add in your two egg YOLKS not egg whites. Continue folding the mixture.
- At this point you want your mixture to be pretty thick, to where it almost resembles cooked scrambled egg consistency where it is no longer runny. About 2 more minutes after adding the bacon & egg.
- Set off the heat and we will start to assemble the scrambles!
Assembling the Toaster Scrambles:
- Flour surface of large cutting board and with rolling pin start to roll out your Bacon Toaster Scramble Dough into a rectangle with rolling pin. Flour the tops of the dough as well to make sure it doesn’t stick. You want your dough to be 1/16th of an inch thick.
- With a pizza dough cutter, cut your large rectangle, discarding the leftover dough into the bowl to use to make your final scrambles. This should be enough to create 8 mini rectangles ( 4 toaster scrambles all together)
- Cut the dough horizontally in half then you cut 3 evenly spaced vertical lines to create 4 rectangles at the top & 4 rectangles at the bottom.
- In the frying pan, portion out your filling in the pan to 6 piles ( or 8 depending on how many you’re making)
- Next take one of your rectangles flatten out a bit more with your rolling pin. Then add your portion of the Bacon Toaster Scramble Filling in the center of the rectangle, spreading it to about ¼ inch away from the sides. Next take another one of your rectangles flatten out a bit more with your rolling pin. Then place directly over the filling symmetrically to the other side.
- Wet a fork, and pinch the sides together ( top & bottom dough) to secure the filling. Repeat for all of them. Rolling out the discarded dough to make two more.
- Place in the oven at 375 for 20 minutes and then enjoy!
Store in an airtight container in the fridge for up to 5 days. To reheat toast on medium low heat for 10 minutes. Zap in the microwave for 30 seconds if need be after it is toasted.
Store in an airtight container in the freezer for up to 2 months. To reheat, bake at 300 for 15 minutes. Zap in the microwave for 30 seconds if need be after that.

Do I need to use Kodiak Cake Buttermilk Mix or can I use another one of their mixes?
I have not tried them with other mixes besides the Kodiak Cake Buttermilk. However, you want this recipe to have a savory crust, so I do not recommend steering away from this mix!
Can I use sausage instead of bacon in the Delicious Bacon & Egg Toaster Scrambles?
I have not tried sausage, but I am sure that would be delicious! I would cook the sausage in the frying pan like the bacon and follow same directions
Is there a way to make these dairy free?
