What Delicious Ingredients Do I Need For Crockpot Blueberry Streusel Coffee Cake?
Ingredients:
Coffee Cake Batter:
- 1 ½ cup Kodiak Cake Blueberry Muffin Mix
- 1 cup fresh blueberries
- ½ cup greek yogurt
- 1 egg
- ⅓ cup light olive oil or grapeseed oil
Streusel Topping:
- 1 ½ tbsp unsalted butter
- 1 tbsp coconut sugar
- ½ cup Kodiak Cake Blueberry Muffin Mix
Lemon Glaze:
- ½ cup of powdered sugar
- 2 tbsp milk of choice
- ½ lemon juiced
- ½ tbsp lemon zest
Whisk until the consistency you prefer, feel free to add more milk if needed

How Do I Get The Coffee Cake Out Of The Crockpot Without It Breaking?
The answer: Parchment Paper!
Cut sheet of parchment paper & layer it over the top of the crockpot, then cut to shape. Then press down below in the crockpot & spray with olive oil spray. Then you will put the coffee cake batter and streusel layers on tops and Voila!
Crockpot Blueberry Streusel Coffee Cake Directions
1.You will make the streusel topping first so that the batter is not left sitting for very long. That way it will have the best airy and fluffy texture. In a food processor add cold unsalted butter cut into pieces, coconut sugar and ½ cup of Kodiak cake Blueberry muffin mix. Pulse until crumbled ( about 45 seconds to 1 minute) then set aside.
2.In a large mixing bowl add 1 ½ cup Kodiak Cake Blueberry Muffin Mix, greek yogurt, egg and light olive oil. Mix until thoroughly combined and all the batter is wet. Fold in the fresh
blueberries.
3.In your 4qt crock pot, line the bottom with parchment paper so that it is easy to pull your coffee cake out at the end to cut.
4. Put the sheet of parchment over the crockpot and cut it to the shape of the crock pot. Then spray the top of the parchment in the crockpot with olive oil spray
5. Now you will start layering your Streusel Topping and Coffee Cake Batter. First sprinkle about ¼ of the Streusel Topping first to have a thin layer on the bottom. Then divide your mixture in half and put the first half down over the Streusel Topping. Spread evenly with your spatula.
6. Repeat Streusel Topping layer on the first layer of Coffee Cake Batter and then the final layer of Coffee Cake Batter and final layer of Streusel Topping.
7. Take a dish towel and place over the top of the Crockpot and close the lid over the towel this will prevent any excess moisture from getting on your coffee cake! Then fold up the sides of the towel over the top of the lid.
8. Cook on high for 1 hour and 30 minutes. Then take the lid off, and towel off. Let cool for about 2 minutes in the crock pot, but we do not want it to cook any longer, so grab the sides of the parchment paper and pull the coffee cake out. Slice, drizzle with lemon glaze and enjoy

Can I use frozen blueberries in the coffee cake?
In this recipe I highly recommend using fresh blueberries, if you use frozen blueberries there will be too much liquid as they thaw out into the coffee cake while baking making it too moist and not the right consistency
Am I able to use the regular pancake mixes instead of the muffin mixes for the coffee cake?
I have not tried it with the regular pancake mixes, so until I tried it, I would say stick with the muffin mixes
The sides got burnt on my coffee cake, what happened?
See my tip above for how to line your crockpot so the batter is not directly touching the sides. Also I have made certain recipes in my old crockpot that kept burning, until I purchased a new one and now it does not burn anymore. It could be your model is older and it is time for a new one 🙂
