Panera’s ability to deliver now is one of the best things to come out of the Pandemic, along with with Drive Up Target… right?? Well the other day at school, I forgot my lunch at home and so of course Panera delivery was the way to go! I saw the Citrus Asian Crunch Salad with Chicken and it looked absolutely delicious. Low and behold it is their newest salad in January! Well I know how much you guys love Panera and HGHF Panera recipes are always on high request, that is why literally 2 weeks after having it multiple times in a row, I took to my kitchen to create an easy at home Copycat. This salad has a lot of extra things to it, and so I created a much easier version to make yourself. However, even though it is easier, it truly tastes EXACTLY like it.
So What Ingredients are in the Citrus Asian Crunch Salad with Chicken?
There are a few ingredients I chose to skip in this copy cat because it would be a lot of different things to prep. It isn’t that that is a bad thing, I just wanted to make this realistic for you all to make at home! Therefore, I included all the delicious ingredients that still makes it taste exactly like it, but easier to make!
Super Food Power Blend
The Panera recipe also includes crispy carrots. Carrots that are battered & fried. However since that is just one extra thing that would take longer, we use the carrots in vegetable blends. Vegetable blends like this one here. They sell already packaged power blends like that one, making it super easy to put together! Packed with cabbage, carrots, kale and broccoli.
Romaine
In this recipe you will use 1/2 Super Food Power Blend and 1/2 romaine lettuce. Provides the perfect crunch balance.
Avocado
The one at Panera does not include avocado, but you sure can add it! Believe me… you for sure want to add it!
Pickled Onions
I will share below just how easy it is to make pickled onions. You can buy them at the store, but I highly recommend making your own. Super easy, delicious and perfect to use on so many other recipes over the 2 weeks they stay fresh.
Tangerine Teriyaki Seared Chicken
Alright… I am not kidding you when I say this is the best seared chicken thighs. We have been obsessed with using the same salad dressing for the marinade for the chicken. You will be making the chicken this way for other meals as well. We make this chicken with rice, broccoli, great protein choice for lunch… list goes on and on. Salad or not, this chicken with be your go to!
Cilantro
I know there are some people who genuinely think cilantro tastes like soap… but we are obsessed.
Edamame

How to Make Easy Pickled Onions
If you have never had Pickled Onions they are the best simple upgrade to sandwiches, wraps, bowls, anything! I know sometimes onions can be very strong raw, but pickled onions just upgrade onions to the next level. Truly could eat them with almost anything! Here is my favorite simple recipe. I love to make these over the weekend to make the prep for this salad super easy during the week. Also you have these for all your other recipe needs for 2 weeks as well. They last 2 weeks in an air tight container in the fridge.
Ingredients:
- Red onion ( 1 )
- White wine vinegar (1 cup)
- Warm water (1 1/2 cups)
- 1/3 cup Granulated Monk Fruit Sweetener
- 2 tbsp salt
- 1 tbsp pepper corns
- 2 cloves garlic
- Thinly slice your red onion. Highly suggest using a mandelion so the slices are uniform. Place in a large mason jar.
- Then in medium sized bowl add in granulated monk fruit sweetener, white wine vinegar and warm water. Whisk until monk fruit absorbs. Then pour over the onions in the mason jar.
- Add in salt, pepper & 2 garlic cloves to mason jar. Shake until throughly combined. Then refrigerate for at least 1 hour.
- Refrigerate for up to 2 weeks in an air tight container.
The Best Tangerine Soy Ginger Dressing for Salad & Chicken Marinade
One of the things with the Panera said is that it has a teriyaki seasoned chicken as well as teriyaki drizzle. However, that would mean you are not only making a salad dressing, but also other marinades etc. That is why I created the best Tangerine Soy Ginger Dressing that tastes just like the Panera dressing. However, also is the BEST chicken marinade for this salad!
Tangerine Soy Ginger Dressing
- 3 Oranges ( 1/2 cup orange juice)
- 5 tbsp rice vinegar
- 1/2 cup light olive oil
- 1/4 cup Soy Sauce
- 1 clove garlic minced
- 1 1/2 tsp monk fruit sweetener granulated or regular granulated sugar
- 2 cm of fresh ginger
- 1/4 tsp onion powder
Place in immersion blender & blend until throughly combined. Store in air tight container in fridge for up to 2 weeks!

Yes you sure can! It takes about 7 to 10 minutes per side to grill chicken thighs or until the internal temperature is 165 degrees F.

Of course! 8 minutes on each side when cooking the chicken breast in the frying pan.
What if I can’t find the power blend type of mixture?

Ingredients
Tangerine Soy Ginger Dressing
- 3 Oranges 1/2 cup orange juice
- 5 tbsp rice vinegar
- 1/2 cup light olive oil
- 1/4 cup Soy Sauce
- 1 clove garlic minced
- 1 1/2 tsp monk fruit sweetener granulated or regular granulated sugar
- 2 cm of fresh ginger

Citrus Asian Crunch Salad with Chicken (Panera Copycat)
- 1 1/2 lbs boneless skinless chicken thighs
- 10 oz Power Blend Mixture
- 2 heads romaine lettuce
- 1 cup edamame
- 1/3 cup chopped cilantro
- pickled onions
- 1 avocado
Instructions
Tangerine Soy Ginger Dressing
- Place all the ingredients into immersion blender safe cup & blend until throughly combined
Citrus Asian Crunch Salad with Chicken (Panera Copycat)
- Place your chicken thighs in deep dish container. Sprinkle salt & pepper over each side of the chicken things. Then pour 1/2 cup of the Tangerine Soy Ginger Dressing over the chicken thighs. Toss until covered, and marinade for at least 1 hour & no more than 24 hours.
- In frying pan turn to medium heat & heat 1 tbsp olive oil. Place marinaded chicken thighs on pan and cook 7 to 8 minutes on each side. Cover with aluminum foil lightly to keep splatters in as well as heat.
- Divide the power blend & chopped romaine among bowls. Then sprinkle HGHF pickled onions on top, edamame, avocado & cilantro.
- Add sliced Tangerine Soy Ginger chicken things on top. Drizzle with Tangerine Soy dressing and enjoy !

Marinade may be good on chicken. But unless I missed an ingredient on this recipe, it tastes NOTHING like Panera
Which I have in my fridge.. I just made this dressing exactly as it appears. It tastes oily and very much like soy sauce despite the garlic and ginger. Not remotely the same color as pictures or original dressing.. what am I missing here???

This salad is the new Panera salad that was released in January 2022. It is not the old one. The dressing for this new recipe is a Tangerine Soy Ginger Dressing, that is not available to buy in stores as of now. So it is not like the Tangerine Honey Dressing or the ginger one that you could possibly have in your fridge. Also if you have tried the new salad you will find that this new dressing at Panera it is a more tangy & more vinegar tasting dressing, but that goes well with the chicken & other ingredients, it is a lot stronger if you try it on its own. It is a dressing meant to be with the other ingredients and that goes for my rendition and the one at Panera. Also it does look that orange color– so I am wondering if you didn’t use light olive oil if you didn’t regular olive oil will make it taste oily. You need to use light olive oil for this recipe, as well as the orange juice. If you do not immersion blend it like the recipe says the dressing color would not show up orange at all, so those things could be the main problems. Not everyone is going to like every recipe, but hopefully next time please feel free to reach out prior to rating it, to figure out the problem.
