The Scrumptious Ingredients for the Buttermilk Chia Pistachio Energy Bites
Kodiak Cakes Buttermilk Chia Flapjack & Waffle Mix
Creamy cashew butter (must be all natural, where the natural oil occurs at the top– this contributes to the texture of the energy bites)
Dried cranberries
Maple syrup
Melted coconut oil
Vanilla extract
White chocolate chips
Shelled pistachios

How EASY are the Buttermilk Chia Pistachio Energy Bites?
+ In a large mixing bowl add in Kodiak Cakes Buttermilk Chia mix, cashew butter, maple syrup, vanilla extract and melted coconut oil. With a spatula mix until thoroughly combined like batter. Then pour in the dried cranberries & mix them in until evenly distributed
+ Line a baking sheet with wax paper and start to roll out the energy bite, each energy bite uses about 1 heaping tbsp of energy bite batter. Freeze for 30 minutes.
+ In a small bowl start to melt your white chocolate chips in 30 second increments in the microwave. Then take your pistachio and pulse them in a blender until they are bite sized pieces
+ Take your energy bites out of the freezer and using tongs, you will toss them in the white chocolate and then IMMEDIATELY sprinkle pistachios on top. Do this one by one, or else the white chocolate will cool and the pistachios will not stick to the top if you wait to sprinkle it on after all are tossed.
+ Then let them set for 10 more minutes in the freezer and then store in an airtight container in the freezer for up to 3 weeks or refrigerator for 1 week.
Tips When Making Energy Bites
WHY IS CASHEW BUTTER IMPORTANT WHEN MAKING ENERGY BITES?
Cashew butter is very important in this energy bite. A lot of energy bites calls from nut butter of some sort. I LOVE using cashew butter in energy bite recipes, because it is the mildest of all the nut butters. That way you do not distract from the flavor you are going for. In this case if you had used almond or peanut butter that almond or peanut butter taste would have taken away from the cranberries, white chocolate etc. Therefore, highly recommend cashew butter and no alternative.
CAN YOU STORE ENERGY BITES IN THE FRIDGE?
Yes! You always want to freeze them for 1 hour before transferring them to a air tight container for the fridge. However, I love to keep them in the freezer because they last longer ( this is when I make a double batch– single batches don’t last long anyways!) Keep in fridge for 5 days and keep in freezer for 2 to 3 weeks!
CAN YOU USE OTHER KODIAK MIXES BESIDES THE BUTTERMILK CHIA?
Yes! As a matter of fact you can use the regular Buttermilk Flapjack mix OR you have make your own oat flour using Kodiak Cakes Power Rolled Oats. My biggest tip when it comes to oat flour too is to NOT buy it from the store. Instead make it with your Kodiak Cake Rolled oats! Take 2 cups of your Kodiak Cakes Power Oats, put into your high power blender. Blend low then gradually to high until powdery flour forms! About 90 seconds.
Buttermilk Chia Pistachio Energy Bite
Ingredients
- 1 ½ cup Kodiak Cakes Buttermilk Chia Flapjack & Waffle Mix
- ½ cup creamy cashew butter must be all natural, where the natural oil occurs at the top– this contributes to the texture of the energy bites
- ½ cup dried cranberries
- 2 ½ tbsp maple syrup
- 2 tbsp melted coconut oil
- 1 tsp vanilla extract
- 6 oz white chocolate chips
- ¼ cup shelled pistachios
Instructions
- In a large mixing bowl add in Kodiak Cakes Buttermilk Chia mix, cashew butter, maple syrup, vanilla extract and melted coconut oil. With a spatula mix until thoroughly combined like batter. Then pour in the dried cranberries & mix them in until evenly distributed
