If I don’t have pepper jack cheese or sharp cheddar, can I use the cheese I have on hand?
Since the corn bread has a hint of sweetness, I recommend using sharper cheese like cheddar cheese and a spicy cheese like pepper jack! Makes for the perfect combination.
How to reheat the cornbread muffins? (plus breakfast idea!)
Microwaving the muffins at 30 seconds works perfectly. Then I love to cook an egg and put it right on top for breakfast!
Bacon Cheddar Corn Bread Muffins
Ingredients
- 1 box Kodiak Cakes Homestead Style Cornbread
- 2/3 cup melted butter or grapeseed oil
- 1 3/4 cup milk
- 4 slices bacon
- 4 oz sharp cheddar
- 4 oz pepper jack cheese
- 1/3 cup chopped green onions
Instructions
- Preheat oven to 350 degrees and grease 12 cup muffin tin or line it with muffin liners.
- Cook bacon using your favorite cooking method until it is about 3/4 cook. My preference is stove top, for 3-4 mintues on each side at medium heat. Then place on plate with paper towel underneath while I finish the rest of the ingredients.
- Shred the 4 oz of sharp cheddar and 4 oz of the pepper jack cheese and place in a bowl to set aside. Then chop the green onions into bite sized pieces.
- In large mixing bowl add in the whole box of Kodiak Cakes Homestead Style Cornbread, eggs, milk, butter or oil and mix until combined with spatula. Next chop up the bacon into bite sized pieces and add into the bowl. After add in the cheese, green onions and fold with spatula until combined.
- Divide the cornbread mixture into the muffin tin cups evenly. Bake at 350 degrees for 25-28 minutes. Then let stand for 5 minutes before spreading delicious butter on top or cooking an egg to put on top as well! Enjoy!
