I am not kidding you when I say this is THE BEST Crock-Pot Chuck Roast you will make. I will be honest, chuck roast is known to be one of the drier cuts of meat… so a lot of times if you cook it not the most efficient way you will be chewing it for quite some time. However, this recipe takes that problem and shoves it far…. far… far… away! This recipe is far from dry and I have the perfect secret in order to do so! Stay tuned, because you will be making this for your family on repeat. It is easy, delicious, minimal ingredients, whole 30 approved, gluten free and dairy free! Wait what? Yep! That way EVERYONE in the family can enjoy The Best Crock-Pot Chuck Roast.
Secret Seasoning Makes it THE BEST
My dad grew up being very close to high grandfather, Daddy Hinkle— which is what they called him. His grandparents lived on a farm in Oklahoma and he loved more than anything to visit there. One of things he loved about going there was not only milking the cows, but Daddy Hinkle’s cooking. He use to make this special seasoning they put on everything.
When Daddy Hinkle passed away they found his seasoning recipe in his belongings. In memory of him they decided to create this seasoning and share it! That is where Daddy Hinkle’s seasoning comes from. However, a few of the cousins drove it into the ground and it can hardly be found anymore.
Growing up we used Daddy Hinkle seasoning ON EVERYTHING. That seasoning reminds me 10000000000 % of childhood. We would use that seasoning in our mayo/Greek Yogurt based sauce for The Best Tuna Noodle Pasta Therefore, my dad and I took to the kitchen to recreate the seasoning, because I wanted to finally share it with you guys, since chances are you don’t have access to the store bought Daddy Hinkle’s.
Results?? WE NAILED IT! I am not kidding you when I say we were jumping up and down with happiness. I am so excited to share a recipe and seasoning that is so near and dear to my heart to you guys.
Therefore, this chuck roast is seasoned with this EXACT blend!
What Ingredients are in the Hinkle Seasoning?
This seasoning is super easy to put together and really draws out the flavors in this cut of meat
- Salt
- Onion flakes
- Garlic powder
- Cane sugar
- Paprika
- Pepper
- Celery seed
- Turmeric
- Red pepper
So How Exactly Do We Keep It From NOT Drying Out?
The secret?
ALUMINUM FOIL ( YEP 3 layers of the stuff!)
Wrapping your chuck roast in 3 layers of aluminum foil keeps the juices secure while cooking and not leaking out, leading it to dry out. It keeps the meat mixture covered in delicious marinade the whole time, so it doesn’t even have a chance to think about drying out!
Cut 3 layers of 1 1/2 ft aluminum foil
Marinate your chuck roast with the Worcester sauce & Hinkle Seasoning
Once covered in marinade, wrap it in 3 layers of 1 1/2 ft of aluminum foil and marinate over night
Then the key is to cook your chuck roast in the Crock-Pot directly AS IS! You will place the chuck roast in the Crock-Pot still wrapped up in the same layers of aluminum foil! Following the three steps below will ensure the perfect texture. It isn’t until the time is up on your Crock-Pot that you will open up the aluminum foil layers.

Are the Directions for The Best Crock-Pot Chuck Roast really SUPER EASY?
Short answer: Yes 🙂
- Lay out 3 large sheets of aluminum foil, one on top of the other. Large enough to where you will be able to wrap your chuck roast closed with no openings.
- Place your chuck roast on top of the center of the 3 layers of aluminum foil. Fold up the outsides of the aluminum a bit, because you are about to start seasoning.
- Take a fork and poke the top about 5 times and then, flip and do the same to the bottom.
- Now take the Worcester Sauce and pour half on the top, rubbing it over the surface, then flip and do the same to the bottom. Also rubbing the sides as well.
- After take your Hinkle seasoning you made that is fully whisked together, and sprinkle 3 tsp of the seasoning on the top and sides, as well the other 3 tsp on the bottom and sides. Fully covering it.
- Fold up the seasoned chuck roast in the 3 sheets of aluminum foil and place in the refrigerator to marinate over night.
- In the morning take it out and put the chuck roast DIRECTLY into your 4qt or 6qt crock pot. You are NOT taking the chuck roast out of the aluminum. This aluminum trick does WONDERS, keeps it soooooooo juicy and not dry like typical pot roast.
- Place on low for 8 hours. Then once 8 hours is up, take your chuck roast out. Flip it over into a deep baking dish and watch it fall apart with your fork— it will not take much, it is like butter!
- Then enjoy anyway you see fit! ( my blog recipe will have ideas! I have just been enjoying on its own with Peperochinis on top! )
Isn’t Chuck Roast Just For Pot Roast?
One of things I love about making this recipe is this is the ideal chuck roast meal prep recipe. Almost always if you see chuck roast you see : pot roast recipe. Now don’t get me wrong I love pot roast, but that is not the only thing Chuck Roast is good for! I love making it in bulk like this to then use for wide variety of recipes throughout the week. Here are a few of my favorites that are not pot roast!
- Chuck Roast Sandwich: On a bun of choice or no bun at all– with ALL the peperoncinos that your heart desires! ( as seen above!)
- Chuck Roast Fajitas : This is probably my all time favorite. Caramelize a sweet onion and large red peppers in garlic ghee, salt and pepper. Then build up a tortilla with The Best Crock-Pot Chuck Roast, caramelized onion & pepper, sour cream and chopped romaine!
- Chuck Roast Burrito Bowl: Add chuck roast meat to any of your favorite burrito bowl toppings. Add in lettuce, tortilla chips, salsa, corn, tomatoes, avocado– the works!
- Chuck Roast Quesadilla: Use your favorite tortillas, favorite quesadilla ingredients and put this chuck roast in it as well! Your taste buds will thank you!
- Chuck Roast… as is :): This is my second favorite way…. okay let’s be real. My top favorite way. I just sit there and eat it out of the Crock-Pot hahah no judgements! Once you make it you will see why!
Do I have to use a 4 qt Crock-Pot for this recipe?
No you don’t have to, you can use whatever Crock-Pot works for you!
Will this recipe still work without wrapping the Chuck Roast in aluminum foil?
It would work, however it will not turn out as good as it does with the method to ensure the chuck roast does not dry out. This recipe ensures the perfect texture and that comes down to the aluminum foil method as well.
Can I cook the chuck roast on High or does it have to be cooked on Low?
Yes! You can cook The Best Crock-Pot Chuck Roast on both settings:
Low for 8 hours or High for 4 hours, then switch to Low for 1 hour.
Is the Chuck Roast for this recipe bone in or boneless?
This recipe calls for boneless chuck roast
Can I make this Chuck Roast in the Instant Pot?
I have not tried this recipe in the Instant Pot, I will make sure I let you all know when I post an Instant Pot version.
Is it okay if the aluminum foil is touching the side of the Crock-Pot?
Yes, it sure can and mine does always in the 4 qt! Aluminum foil is safe in the Crock-Pot.
What is the best way to store the Chuck Roast?
STORE THE CHUCK ROAST IN THE JUICES! Yes it will congeal the next day, but once you heat it up it will liquify again. This keeps the chuck roast nice and juicy, once again not tried out!

The Best Crock-Pot Chuck Roast
Equipment
- Pressure Cooker (4 qt suggested)
- 3 sheets of 1 1/2 ft of aluminum foil
Ingredients
- 2 lb bone out chuck roast
- 2 tsp salt
- 2 tsp onion flakes
- 2 tsp garlic powder
- 1 tsp cane sugar
- 1 tsp paprika
- 1 tsp pepper
- 1 tsp celery seed
- 1/2 tsp turmeric
- 1/2 tsp red pepper
- 1 1/2 tbsp Worcester Sauce
Instructions
Hinkle Seasoning
- First you will make your Hinkle seasoning in order to season your chuck roast
- In a small bowl add in your salt, onion flakes, garlic powder, cane sugar, paprika, pepper, celery seed, turmeric and pepper. Whisk together until fully combined.

Flip it over into a deep baking dish and watch it fall apart with your fork— it will not take much, it is like butter! Make sure you store in the juices to ensure it does not dry out the next day

I would say the best rule of thumb would be took cook it on low for 8 hours. After that you can open up the aluminum foil a bit, take a fork and check. I think in the larger crock pots, it should cook through well low for 8 hours. Make sure you check on the feature on the recipe card if you are upping the pounds it will adjust the seasoning for you, so you don’t have to yourself 🙂 I would not add the veggies in because it will be soaking in the oils that come out through the aluminum foil. Thanks for your questions! I cannot WAIT for you to try it!!!

Loved this recipe. It was super easy to throw together the night before and have ready to throw in the crockpot. The flavors are so on point. They are different from the traditional roast flavors and make for a good and delicious change to mix it up. Also, the idea of putting the roast in with the foil is a little intimidating to me, but I was amazed at how perfect the entire roast turned out. There were no dry spots at all. I will definitely be making this again.

I just made this in my oven, at 170 degrees for 8 hrs… it tasted so good, was tender, and juicy. No need for a cook pot! I did have to put 6 sheets of aluminum foil together though because my chuck roast was significant in size. Leakage did happen a little bit, but I placed my wrapped roast on a cookie sheet with edges just incase.

I never comment on anything, but THIS! So good! The last 3 recipes we’ve tried with chuck roast have been tough. We have several chuck roasts in our freezer so I was determined to find a good recipe. All 8 of us LOVED it! I cooked it on high for 4 hours and low for an hour & a half. The meat fell right off the bone and shredded with very little effort. The flavor was delicious. I forgot to season and leave it overnight in the fridge, but it was still incredible!! When my husband pulled it out of the crock pot to “shred,” the whole time he was just saying, “Wow!” over and over. You were right, it does fall apart like butter! Excellent recipe.
