My mom is pecan pie obsessed. I brought some of these Classic & Simple Pecan Pie Pops to her the other day and she immediately texted me and said “OMG. That was great!!! I want more!!!” Need I say more, these are a winner! One of my favorite things about them is not only are they delicious, but they are SO easy! When I think of pies, I think of things being very time consuming. However, with these Classic & Simple Pecan Pie Pops, you will have these ready in under 30 minute! Not to mention… how cute are these personalized pops? Perfect serving size, not to mention easy to grab and go! These are also perfect for baby shower, bridal shower etc. You can stick the pops in mason jar and set them out on the table! Cut whatever shapes you need for whatever occasion. So much fun!
What ingredients do I need for the Classic & Simple Pecan Pie Pop filling?
- Pie Dough Crust ( I love to use Wholly Wholesome pie dough– comes with 2 pie dough crusts, which is what you need. Quality ingredients, no enriched flour)
- Brown Sugar
- Pecans
- Coconut Cream or regular cream
- Date Syrup or mollasses
- Vanilla Extract
- Salt
Pecan Pie without Corn Syrup?
Corn syrup is normally used in pies like pecan pie to create a smooth texture and keep from the sugar crystalizing when baked which can make it grainy. However, the combination of brown sugar, cream & date syrup, creates a delicious non grainy filling. Nothing but deliciousness!
So when I say we can make these Classic & Simple Pecan Pie Pops without corn syrup, we must certainly can! Which makes the holidays that much sweeter and makes me feel good about my little one eating as many as she wants…. 😉
What cookie cutters and sticks do I need?

What makes this recipe so much fun is that you can use WHATEVER cookie cutters you want– so whatever theme you are doing, these are perfect for it! However, I highly recommend doing medium to large cookie cutters and ones that have a big middle. What do I mean by that? The rocking horses and gingerbread were best for these because the middle of the design has enough space where you can put a good amount of filling inside. You won’t be able crimp the edges if you overfill them, so a lot of times the skinny edges or designs makes it hard to get enough filling in it.
Wooden Cake Pop Sticks
I linked above the style of cake pop sticks that are ideal for these. However, I also have used bamboo skewers from the grocery store and cut them in half– work great too!
Now in order to put the cake pop sticks in the oven you need to SOAK THEM for at least 30 minutes before putting in the oven. That way they will not burn.

Classic and Simple Pecan Pie Pops
Ingredients
- 2 9in Organic Pie Dough
- 1 cup chopped pecans
- 1/2 cup brown sugar
- 1/4 cup coconut cream (NOT milk!)
- 1 tbsp date syrup
- 2 tsp vanilla extract
- 1/4 tsp salt
- 10 wooden cake pop sticks (see above in post for refrences!)
- 2 tbsp butter
Instructions
- You will need to soak your wooden cake pop sticks in water for at least 30 minutes before using in the oven, this needs to be done first.
- Preheat oven per pie dough instructions. Follow instructions on the pie dough container to see how long you need to let it thaw before using ( make sure you take note of that!)
- With a sharp knife, chop your pecans into small bite sized pieces and pour 1 cup of those chopped pecans into a medium sized bowl.
- Then add in the brown sugar, coconut cream, date syrup, vanilla extract and salt. Mix until throughly combined. Let it rest in the fridge while you cut your pie dough with the cookie cutters.
- You will need to make sure to use your cookie cutter twice for ONE pecan pie pop. The back and the front of the pop.
- Next, place 1 out of the 2 pie dough cut outs for each pie pop on the baking sheet. Place the cake pop stick on the pie dough cut out. To where the tip of the cake pop stick is right in the center of the dough and press down gently.
- Then take the filling out of the fridge, with small spoon place the pecan pie filling on the pie dough cut out on the baking sheet. Make sure that it is leaving room on the edges to be able to crimp the crust like seen above.
- After, place the top pie dough cut out that matches each pecan pie pop over the filling. Repeat for each pecan pie pop. Then dip your fork in flour before crimping your pie crusts on the sides. Go around each pecan pie pop, crimping the sides closed with your fork. It is okay if a little bit of stuffing comes out. If they are unable to be crimped you stuffed it with too much, and adjust accordingly.
- Melt the 2 tbsp of butter and brush the tops to each pecan pie pop. Bake according to pie dough instructions. Always go for a minute under, it is perfect when they are just golden brown.
- Let cool for at least 5 mintues and they they will hold when picked up by the cake pop stick. Then sprinkle with powdered sugar on top and enjoy!
