I am not kidding you, these are the best breakfast burritos and my favorite meal prep for the week! There are so many times that I am rushing around in the morning with Ainsley that eating my own breakfast ends up being the last thing I do. However, I know how important it is for me to fuel my body with a healthy, delicious breakfast that will keep me powered through work until lunch time. That is where this perfect meal prep comes to play!
I love making these breakfast burritos over the weekend for meal prep, because then they normally last about 2 to 2 1/2 school weeks. I don’t have one every day, but they are conveniently in the freezer for when I want one or am running really late and can take one easily with me in the car.

How to Store:
When I make the burritos I wrap them each in aluminum foil. That way you can pull them easily out of your ziplock freezer bag when you need them. I normally make 2 bags. 1 bag that I leave out for 4-5 days that have a few in them for the current week. Then I freeze the rest! That simple!
How to Reheat:
Microwave: I will do the microwave if I am in a hurry and need it in less than 2 minutes. Still tastes wonderful even after it is zapped in the microwave 🙂 Get a paper towel damp, then unwrap the burrito out of the aluminum foil and wrap it in damp paper towels. Then microwave for 60 seconds on first side and then flip for 60 seconds on the other side.
Oven: Preheat the oven to 425. For burritos that have NOT been froze, place burrito wrapped in aluminum foil on the oven rack for 15 minutes. For burritos that ARE frozen. Place in the oven wrapped in aluminum foil for 25-30 minutes
TIP: I will come down stairs and put my burrito in while I start the coffee. Then go upstairs to finish getting ready. By the time I come down stairs coffee and breakfast is ready!
How To Wrap The Best Breakfast Burrito
Best Part? You can do whatever variations you would like!
Pick your protein: I love doing chicken sausage, but feel free to use bacon, ham, tofu etc. whatever is your favorite!
Pick your veggies: I love this mix of carrots, sweet potatoes and russet potatoes that I get– makes things SO much easier. However, I have also done mixed bell peppers, mushrooms and spinach before too. Whatever you love to put in your eggs.
Pick your cheese: In this recipe we use shredded Mexican cheese, but again you can use whatever cheese you enjoy. Especially when it comes to what other protein or veggies you put in it too! Or go DF up to you!
Make it GF or DF if need be or choose Whole 30 ingredients as well!

The Best Breakfast Burrito
Ingredients
- 10 eggs
- 10 tortillas (7 inch )
- 12 oz Frozen Cascadian Farm Organic Hashbrown Root Vegetables
- 2 tsp Everything Bagel Seasoning
- 12 oz shredded cheese
- 4 oz hatch chilies
- 8 oz chicken sausage
Instructions
- Crack the eggs into a bowl and scramble with fork and set aside
- Put your larger frying pan on the stove. Heat up 2 tbl olive oil on medium high heat
- Once the pan is warmed up, add the root veggie hash browns and cook per package instructions. After put them in a bowl and set a side
- Next add 1 tbl olive oil to the hot pan and the breakfast sausage. Cook until no longer pink. Then add in the green chilies– add in salt and pepper to taste. Set aside the breakfast sausage in a bowl.
- Add the eggs into the pan while it is still hot and has the flavors left over from the sausage, and sprinkle with Everything Bagel Seasoning. Cook until they are almost done. You want the eggs to not be done fully, so that when you reheat they are perfectly cooked.
ASSEMBLY TIME
- I cut up my aluminum foil in squares big enough to wrap the burritos in. I do aluminum foil so that if I do want to put them in the oven to heat up, you can just take the burrito out the freezer in the aluminum and put it right into the oven
- Lay out each tortilla on top of the aluminum foil square and start layering ingredients. I would lay them all out so you are able to portion out the ingredients evenly. Do less at first, you can always add more if there is some left over. (see above for how I layer and roll the burritos) Tortilla, egg, hash brown root veggies, chicken sausage then cheese.
- Then roll up your burrito, right side in about 2 inches, then pull up the bottom to pull in the ingredients and fold over the side– roll tight! Then since you laid the tortilla on the aluminum you can then roll aluminum foil around it right away. Put in the freezer and ENJOY any time you want.
