I am all about meal prepping for the week ahead! Even in the Spring when we taught from home, I still would love to meal prep for the week. It truly makes the day so much smoother. So when it came to creating delicious Fall creation for lunches this was a no brainer. This Apple Broccoli Bacon Fall salad will be your go to for lunches this week and weeks to come!

- Letting the flavors meld over night makes a huge difference. I love how some recipes are not the best after the sit. This recipe is perfect for lunches because it is the opposite! It is wonderful after two days, three days, up to 5 days— but it won’t last that long promise!

- Broccoli
- Sweet Potato
- Bacon
- Mild Cheddar
- Apple
- Pecans
- Dried Cranberries
- Red Onion
- (Pomegranate seeds optional)
Broccoli Apple Bacon Fall Salad
Equipment
- Immersion Blender
Ingredients
Broccoli Apple Bacon Fall Salad
- 5 cups chopped broccoli
- 4 oz mild cheddar
- 5 pieces bacon
- 1/4 cup finely chopped red onion
- 1 apple cut into bite sized pieces
- 1 1/2 cup steamed sweet potatoes
- 1/3 cup dried cranberries
Tangy Berry Dressing
- 1/3 cup greek yogurt
- 1/3 cup mayonaise
- 4 tbsp Karuna Viva (Beet, Ashitaba and Pomegranate) Whole Plant Drink
- 1 1/2 tbsp apple cider vinegar
- 1/4 tsp salt
- 1 cup pecans
Instructions
Broccoli Apple Bacon Fall Salad
- Steam 1 1/2 cup sweet pototao cut into about 1/2 inch pieces. Steam for about 15 minutes. To where you can stick it with your fork, but will still be a great consistency to hold together in the salad. Once done, run over cool water and let sit.
- Chop your broccoli and place in large bowl. Add in cooked chopped bacon, chopped apples, pecans, chopped cheddar cheese, chopped red onion and cranberries. Mix until throughly combined.
- When sweet potaotes have cooled. Pour into the bowl and mix until combined again.
- Then pour the Tangy Berry dressing over it. Cover and place in fridge over night. Then enjoy!
Tangy Berry Dressing
- In immersion blender safe container add in mayonaise, greek yogurt, Karuna, salt and apple cider vinegar. Immersion blend up and down for about 10 seconds. Should be a light pink color. Refridgerate until ready to use.
