EASY HASH BROWN CASSEROLE

INGREDIENTS:

– Hash browns – Sour cream – Greek yogurt – Corn – Poblano pepper – Cheese – Pepper – Paprika – Garlic

Preheat the oven to 350 degrees and grease your 9 x 13 baking dish.

Instructions:

Make sure that your frozen hash browns have been thawed on the counter for at least 1 to 2 hours.

Add your thawed hash browns to a large bowl. Then add your 1 tsp salt, 1/2 tsp pepper, 1/2 tsp paprika, and 3 cloves of minced garlic. Evenly disperse with a spatula.

Then add your sour cream & Greek yogurt mixture. Fold until fully incorporated. Then fold in your corn, chopped & deseeded poblano peppers, and shredded cheese.

Sprinkle the remaining shredded cheese on top, and bake for 50 minutes at 350 degrees.
