DELICIOUS GLUTEN FREE BROCCOLI CHICKEN CHEESE CASSEROLE

This gluten-free broccoli chicken cheese casserole is an easy, nutritious dinner to make for the family during the week and meal prep.

INGREDIENTS:

– Rotisserie chicken – Broccoli – Quinoa – Cheese – Onion – Tapioca flour – Chicken broth – Cream of chicken soup – Greek yogurt

Chop your yellow onion and mince your garlic. Then set it aside. Grate your  2–8 oz of cheese and set aside.

Instructions:

Cook quinoa or supermix per bag directions, then set aside.

In a large bowl, whisk together chicken broth, cream of chicken soup, sour cream or Greek yogurt, mayonnaise, salt, oregano, paprika, and pepper.

In a large skillet, add 2 tablespoons of olive oil and heat on medium heat. Add in chopped onions and garlic. Saute for 3 minutes.

Pour in your cream of chicken soup mixture, and with a whisk, continue to whisk the sauce until it thickens and the cheese is melted. Then set it aside.
