EASY HIGH PROTEIN CHEDDAR CORN FRITTERS

They can be made both sweet & savory. However, with these high-protein cheddar corn fritters, we are ditching the deep fryer & using the frying pan.

INGREDIENTS:

– Kodiak cake power flour – Cheddar – Sweet corn – Egg – Milk – Oil – Chives – Baking powder – Garlic powder – Cayenne powder

Instructions:

In a large mixing bowl, sift your Kodiak Cake Power Flour, then add in the rest of your dry ingredients: baking powder, salt, garlic powder, cayenne pepper, onion powder, shredded cheddar, & chives.

Pour in your milk, oil, and egg. Take your mixing spatula & fold until fully incorporated, but do not over mix, just once all the mixture is “wet".

Next fold in your corn & set aside.

Heat 2 tbsp oil on your frying pan at medium heat. Cook each side for 3 to 4 minutes, each side will be crispy brown.

Place on a plate with a paper towel to soak up any excess oil. Then serve!
