DELECTABLE LOW CARB FRUIT PIZZA

This recipe is super kid friendly and really fun to make with kiddos as well. 

INGREDIENTS:

– Kodiak cake – Eggs – Butter – Monk fruit sweetener – Cream cheese – Vanilla extract – Greek yogurt – Low carb Fruit

This is by far going to be one of your favorite breakfast meal prep or healthy sweet treat! This fruit pizza is simple, delicious and is the best low carb crust!

Instructions:

In a large mixing bowl add in 1 stick of unsalted butter brought to room temperature, ½ cup Monk Fruit Sweetener and 4 tbsp. cream cheese.

Using your hand mixer, mix for 1 minute, until the mixture starts to combine well, then add in the 2 eggs, continue to mix for another 2 minutes, which should bring it to a nice smooth consistency.

Add in 1 cup of Kodiak Cake Carb Conscious Mix and fold in until combined with spatula.

On a baking sheet, place parchment paper and spray very lightly with cooking spray before pour batter on sheet.
